Ingredients
¼ C. apple cider
¼ C. finely chopped crystallized ginger
¼ C packed brown sugar
½ C unsalted butter, softened
1 Tablespppn molasses
1 T. baking powder
¼ tsp baking soda
2 C. unbleached all purpose flour
1 - 1 ½ tsp. ground ginger

Directions
In a large mixing bowl with a wooden spoon, blend together butter and brown sugar until well mixed. Stir in molasses and cider ( mixture will separate ). In another bowl combine flour, baking powder, ground ginger, and baking soda. Stir crystallized ginger into the flour mixture. Stir flour mixture into the butter mixture until well blended. On a lightly floured surface, roll dough to ¾ inch thickness. With a biscuit cutter, cut the dough into 1 ½-inch rounds. Place on a greased baking sheet. Bake in a 400 deg. oven for 8 - 10 minutes or until lightly browned. Remove biscuits from baking sheet and cool slightly on a wire rack; serve warm. Makes 14 biscuits.
