Ingredients 1/3 cup vegetable oil, divided 1 cup fresh grated coconut 1 large onion, finely chopped 2 cloves garlic, finely chopped 2 cans mild green chiles, chopped 2 T. chopped unsalted cashews 1 pound Halibut fillets, finely chopped 1 T. lemon juice 2 eggs, lightly beaten 1 teaspoon Curry Powder

Directions Saute` coconut in 1 T. oil until lightly browned. Saute` onion in remaining oil until tender but not browned. Add garlic, chiles, salt, curry powder and cook for 2 minutes stirring constantly. Add coconut, nuts, and halibut. Cook 2 minutes. Cool for 5 minutes. Mix lemon juice with eggs and add to mixture. Divide mixture among 6 oiled (7 inch) squares of aluminum foil. Wrap tightly and place on baking sheet. Bake @ 375 for 20 minutes. Serves 6.
