Ingredients 1 Clove garlic, minced 1 ½ tsp. Dijon mustard 1 ½ tsp. Dry mustard 1 tsp. Olive oil ¼ tsp. Paprika 3 large potatoes 1/8 tsp. Cayenne pepper 1 tsp. dried tarragon (optional)

Directions In a medium bowl mix dry mustard, Dijon mustard, olive oil, garlic, tarragon, paprika, and cayenne pepper into a smooth paste. Cut unpeeled potatoes into 1 inch chunks. Pat dry with a paper towel and toss with mustard mixture until coated. Arrange potatoes in single layer on lightly greased baking pan. Bake @ 425 degrees for 30 - 35 minutes or until tender. Serves 4.
