Ingredients 1 ½ tsp. Garlic powder 1 ½ tsp. Basil 6 white fish fillets 2 sticks butter or margarine 2 Tbsp. Paprika 1 tsp. Onion powder 2 tsp. Lemon pepper 1 tsp. Thyme 2 ½ tsp. Salt

Directions Combine seasonings. Keep fillets refrigerated until ready to use. Dip each fillet in melted butter, coating both sides. Sprinkle about 1 tablespoon of seasoning on both sides of the fillet, patting in by hand. Heat large cast iron skillet on high heat until a drop of water sizzles, about 10 minutes or less depending on stove. Place 3 fillets in skillet. Drizzle each fillet with 1 tablespoon melted butter. The pan will smoke and will spatter, handle with caution ! Cook about 2 minutes each side. Remove to warm platter and repeat with remaining fillets. for a milder flavor, cook over medium-high heat for 5 - 6 minutes each side.
