Ingredients 2 Tbsp. Lemon juice ¼ c. Dijon Mustard 6 ( 6 - 7 oz. ) halibut fillets 2 ½ c. mayonnaise 2 Tbsp. Sherry, Orange Juice or Brandy 2 Tbsp. White wine Salt to taste white pepper to taste 1 Tbsp. Oil 1 ½ c. bread crumbs, dry 2 medium onions, sliced thin ½ c. grated parmesan cheese Dill Weed to taste

Directions Sauté onions in 1 tablespoon oil just until translucent. Remove from heat and drain excess liquid. Spread sautéed onions on the bottom of an 8 x 14 x 2 - inch casserole dish or cake pan and sprinkle with about 2 tablespoons each of sherry, white wine, and lemon juice. Lightly season onions with dill weed, salt, and white pepper. Mix mayonnaise, Dijon mustard, and 1 tablespoon dill weed. Dip Halibut fillets into the mayonnaise mixture, coating them on both sides and lay them on top of the sautéed onions. Season with salt and white pepper. Mix the bread crumbs with parmesan cheese and sprinkle over the top of the halibut fillets. bake uncovered in a 325 degree oven for 10 - 15 minutes or until halibut is done and crumbs are lightly browned.
