Ingredients 4 - 5 Telicherry Peppercorns ½ c. vinegar ½ tsp. Cayenne pepper 3 lbs. Corned meat 4 cloves 1 bay leaf water 1 tsp. Turmeric ¼ c. sugar

Directions Allow 35 - 40 minutes of cooking time per pound. Dry meat with paper towel. Rub with Turmeric and Cayenne Pepper. Place in a large pan and cover with water. Add remaining ingredients and bring to a boil. Reduce heat and simmer for the remaining time. Serves 6 -8. For a variation, you can cover dry cooked meat with marmalade or crushed pineapple and bake for 20 minutes.
