Ingredients ¼ cup pure maple syrup ½ cup pure apple juice ½ cup sliced whole ginger

Directions Preheat oven to 200. Combine the apple juice and maple syrup in a small saucepan and bring to a boil. Add the ginger and reduce the heat to a gentle simmer; cook until all the liquid has evaporated, about 20 minutes. Stir frequently to prevent burning, especially towards the end of the cooking time. Arrange the hot ginger pieces on a cookie sheet lined with parchment paper. Bake until all the pieces are dry and snap when broken, about 1 hour and 30 minutes. Makes about ½ cup, about 10 calories per 1 Tablespoon serving, no added fat.
